When the timer rings, take that cake out and keep it out! Very often, we are tempted to pop it back in since it looks a little underbaked but resist that temptation! Over baking your lava cake will cause it to harden in the centre and you'd be left with a crumbly, instead of lava, cake! The cake will continue to cook when you take it out of the oven, so don't worry about it being undercooked!
Grease your ramekins well and it will be a breeze for you to get your lava cake out. Just run a sharp knife along the sides and pop it out! If you are having problems getting it out, then you might want to consider just serving it in the ramekins so the lava doesn't flow out before you even serve it.
While you’re supposed to serve lava cakes warm, allow the cake to cool for a minute or two before you remove it from the ramekins. This allows the cake to set a little more and prevents it from breaking when you remove it. Removing the cakes immediately may cause your cake to collapse into a mush.
