Gila for Gula | Gula Melaka Coconut Loaf Cakes Ltd. Ed.

Difficulty Level: Easy
Time taken: preparation 15mins > mixing of batter 20 mins > baking about 40mins
Yield: 2x medium loaf cakes

Used commonly in Asian desserts such as chendol and ondeh ondeh, gula melaka is Malaysia's version of coconut palm sugar. It comes in blocks, and has a complex toffee-like, smokey caramel flavour and an unmistakable brownish hue.

We love loaf cakes for their simplicity and versatility. They're super simple to whip up and gorgeous to boot. Bake them in a pretty disposable loaf pan and you're good to go for a party; dig into them with a cup of coffee for a midday treat, and bake them for a fun bonding activity with your loved ones!

First, desiccated coconut are toasted until light, golden and fragrant. They are then folded into the cake batter with gula melaka. Before baking, the cakes are topped with more desiccated coconut for texture. After the loaves are baked they are super moist, with a tender crumb that's bursting with molten gula melaka.
