Used commonly in Asian desserts such as chendol and ondeh ondeh, gula melaka is Malaysia's version of coconut palm sugar. It comes in blocks, and has a complex toffee-like, smokey caramel flavour and an unmistakable brownish hue.

First, desiccated coconut are toasted until light, golden and fragrant. They are then folded into the cake batter with gula melaka. Before baking, the cakes are topped with more desiccated coconut for texture. After the loaves are baked they are super moist, with a tender crumb that's bursting with molten gula melaka.
