With the bubble tea craze ensuing and our love for Yuan Yang, we couldn’t not try to create something that encapsulates our love for all things local.

Yuan Yang (鴛鴦) is a drink that you can find in local coffee shops in Singapore, where coffee is mixed with tea to give you the best of both worlds.

In these Yuan Yang mooncakes, coffee is added to the bouncy snow skin. The coffee provides smooth and bitter notes, balancing out the less-sweet royal milk tea filling within. To mimic the look and concept of BBT, we throw some Callebaut white chocolate wafer pearls into the mix. Each bite gives you lingering caramel notes and an addictive crunch—it’s an explosion of flavours and textures.

Editor: If there’s any tip I’d give if you’re making these mooncakes—resist from snacking on the white chocolate pearls! They’re so good on their own—I know—but save some for your mooncakes.

Share the love with your family and friends—This year, we’ve doubled the yield you can get from each mooncake kit (but not the price!), so that you have enough to go around, and make them into larger mooncakes for sharing.

Keep fresh for up to 8 weeks in a cool, dry area away from direct heat or sunlight. You may store them in the fridge as well, but note that refrigeration will make your mooncake paste slightly greasier. It'll still remain good to use.

Store freshly made mooncakes in an airtight container in the refrigerator for up to 1 week.
