Coffee and chocoholics will love July’s subscription kit.
It features the classic combination of coffee and chocolate in the form of cupcakes - something we’ve not done on The Bake Better Subscription before.
Cupcakes are known to be overly sweet and cloying, but our baker has specially developed a recipe that has just the right amount of sweetness, perfect for your tastebuds.
And guess what? These cupcakes do not require any eggs at all!
They’re incredibly simple to make - simply sift the dry ingredients together and mix to combine.
Next, add all the wet ingredients into another bowl, mix to combine, then add the wet ingredients to the dry ingredients!
Give it a good mix to make sure that everything is well incorporated, and voila! You got yourself a bowl of shiny chocolate cake batter that’s ready to go into the oven.
This recipe makes 11-12 cupcakes so go ahead, grab those muffin liners from your box and line your muffin pan!

To check if your cupcakes are done, use the skewer provided in your kit to insert into the middle of the cupcakes. If they come out clean, they’re done! Otherwise, continue baking for 5 to 10 more minutes and check again.
What are cupcakes without frosting?
While waiting for your cupcakes to cool completely, move on to the cream topping!
Pour your cold cream into a bowl and whip it to soft peaks before adding in the coffee mix. Refer to your recipe card for tips on how to differentiate between soft and stiff peaks.
Once that’s done and dusted, transfer your cream to the piping bag that’s provided in the kit. Don’t forget to fit it with the round piping tip given, and snip the end off!
