We've made layered bars and loaf cakes, so this time round, we wanted to venture into something new for you guys - cream puffs. These golden puffs, when piped to the brim with smooth, luscious pastry cream, are enough to get our knees weak.
Flavour-wise, we wanted something that is not commonly found outside, and passionfruit with its tangy and bright flavour, makes the perfect pairing for earthy matcha.
Each of the kits comes complete with piping bags and a Wilton piping tip for you to pipe 'em choux pastry batter and pastry cream!
So first off, to make the pastry cream, we cook a mixture of egg yolks, milk, sugar and cornstarch over the stove. After it gets nice and thick, we then divide the cream into two different bowls and chill them in the refrigerator.
When the pastry cream has chilled and set, we then start to flavour it! Passionfruit puree and matcha powder are folded respectively into the two different bowls.
With our pastry creams done and dusted, we then fill the provided piping bags, and start piping our choux pastries.
Finally, to top it all off, we take some quality dark chocolate chunks and melt them over a double boiler with butter and confectioners' sugar to get a silky dark chocolate ganache.
Next comes the fun part! With our puffs all filled to the brim with cold pastry cream, we then take each one and dip their tops into the molten dark chocolate. Let it set, and you have yourself an irresistible treat.
