If you are looking for something to adorn your Christmas bakes with, these meringue snowmen are perfect for you! Not only are they adorable, they are incredibly easy to make as well. All you’ll need are some egg whites, sugar, chocolate chips/chocolate (for melting), and some chocolate biscuit sticks, and you’re ready to go.
Start by whisking 3 egg whites, gradually adding granulated sugar until it turns opaque and stiff peaks form. The peaks should hold and point upwards when you turn the whisk/mixer upside down.
Next, transfer the meringue into a piping bag and pipe 3 cm rounds onto a parchment-lined baking tray (the parchment prevents the meringues from sticking!). Pop the piped meringues into the oven preheated at 100-120°C for 2-3 hours.
A low temperature and long oven time will allow the meringues to dehydrate. Your meringue blobs will slowly dry out; remove them from the oven when they feel light, have a dry exterior, and can be easily lifted off the parchment. They shouldn’t turn brown!
Once the meringues are done, melt chocolate using a double boiler or in a microwave (in intervals of 10-15 seconds). You may make a double boiler by placing a heatproof bowl on top of a saucepan of simmering water. The steam will heat up the bowl and melt the chocolate gently. Ensure that the water does not touch the bottom of the bowl, and that the flame is not too high.
Next, transfer the molten chocolate into a smaller piping bag, cut a small hole at the tip, and start decorating!
Now, this is the part where you get to let your imagination run wild. Using the melted chocolate, draw all sorts of faces on the snowmen meringues!
Pipe some of the melted chocolate onto the bottom of the mini chocolate chips to give the snowmen chocolate chip buttons.
Finally, break the chocolate biscuit sticks into smaller pieces and poke them into the meringues to give the snowmen chocolate arms.
And there you have it, cute meringue snowmen ready to add festive cheer to your dining table!
P.S If you have excess melted chocolate, you can give the snowmen chocolate hats! Do note that these meringues cannot be stored for long as they will absorb moisture from the air and deflate/get soft/become sticky. You may refrigerate them to extend the shelf-life!
